Mutton Malai Tikka Pulao
Serves 5-6
Recipe in English:

Ingredients:
-Dahi (Yogurt) hung 1 Cup
-Cream ½ Cup
-Kacha papita (Raw papaya) paste 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) paste 1 tbs
-Namak (Salt) 1 tsp or to taste
-Zeera powder (Cumin powder) ½ tsp
-Sabut dhania (coriander seeds) crushed 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Garam masala powder 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Mutton boneless cubes ½ kg
-Rafhan corn oil 1/4 Cup
-Rafhan corn oil 1/4 Cup
-Laung (Cloves) 2
-Darchini (Cinnamon sticks) 2
-Badi elaichi (Black cardamom) 1
-Sabut kali mirch (Black peppercorns) 3
-Tez paat (Bay leaf) 1
-Zeera (Cumin seeds) ½ tsp
-Pyaz (Onion) sliced 1 medium
-Hari mirch (Green chillies) sliced 3
-Chawal (Rice) sella basmati 2 Cups (soaked)
-Pani (Water) 3 Cups or as required
-Chicken cubes 2
-Namak (Salt) ½ tsp or to taste
-Pyaz (Onion) fried
-Koyla (Charcoal) for smoke

Directions:
-In bowl,add yogurt,cream,raw papaya paste,ginger garlic paste,green chilli paste,salt,cumin powder, coriander seed,black pepper powder,garam masala powder,white pepper powder and mix well.
-Add mutton boneless cubes,mix well and marinate for 2-4 hours.
-In wok,add corn oil,marinated mutton and mix well,cover and cook on low flame for 30-45 minutes or until tender then cook on high flame until oil separates.
-In pot,add corn oil,cloves,cinnamon sticks,black cardamom,black peppercorns,bay leaf,cumin seeds and mix.
-Add onion and fry until light golden.
-Add green chillies,rice and mix well.
-Add water,chicken cubes,salt,mix well and bring it to boil,cover and cook on low flame until 3/4th done.
-Now add cooked mutton,fried onion,cover and cook on low flame for 20 minutes.
-Give a charcoal smoke for 2 minutes.
-Garnish with fried onion & serve!

-Koyla (Charcoal) for smoke

Directions:
-Bowl mein dahi,cream,kacha papita paste,adrak lehsan paste,hari mirch paste,namak,zeera powder, dhania,kali mirch powder,garam masala powder aur safed mirch powder dal ker ache tarhan mix ker lein.
-Mutton boneless cubes dal ker ache tarhan mix karein 2-4 hours kliya marinate ker lein.
-Karhai mein corn oil aur marinated mutton dal ker ache tarhan mix karein aur dhak ker halki ancch per gosht gul janay ya 30-45 minutes kliya paka lein phit tez ancch per oil alag hunay tak paka lein.
-Pot mein corn oil,laung,darchini,badi elaichi,sabut kali mirch,tez paat aur zeera dal ker mix karein.
-Pyaz dal ker light golden hunay tak fry ker lein.
-Hari mirch aur chawal dal ker ache tarhan mix ker lein.
-Pani,chicken cubes aur namak dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 3/4th done hunay tak paka lein.
-Ab cooked mutton aur fried pyaz dal ker dhak dein aur halki ancch ker 20 minutes kliya paka lein.
-2 minutes kliya koyla ka dhuwan dein.
-Fried pyaz sa garnish ker ka serve karein!
