Chicken Rashmi Kabab:

Ingredients:
Chicken mince 500 gm
Salt to taste
Green chilies 6
Onion (sliced) 1
Green coriander 2 tbsp
Butter 100 gm
Garlic cloves mince 3
Cumin powder 1 ½ tsp
All spice powder 1 tsp
Black pepper powder 1 tsp
White pepper powder 1 tsp
Coconut powder 2 tbsp
Oil as required
Coal for the smoke

Method:
In the food processor add chicken mince, salt, green chilies, sliced onion, green coriander, butter, cumin powder, all spice powder, cumin powder, black pepper, white pepper and coconut powder. Grind well. Then marinate it for about 30 minutes in the fridge. Now apply oil in the hands and make kababs out of chicken mixture. Then heat oil in a pan and fry the rashmi kabab. Lastly give smoke of coal and serve hot.



Vegetable Jalfrezi:

Ingredients:

Oil 1/2 cup
Cumin seeds 1 tsp
Onions (jalfrezi style cut) 2
Green onion chopped 3
Green chili sliced 2-3
Ginger garlic paste 1 tsp
Tomato (cubed) 3
Carrot (cut into rounds) 1 large
Turmeric powder 1/4 tsp
Cardamom powder 1/4 tsp
Red chili powder 1 tsp
All spice powder 1/2 tsp
Tomato ketchup 1 tbsp
White vinegar 1 tbsp
Sugar 1 tsp
Salt to taste
Tomato puree 1/2 cup
Bell pepper cubed 2 medium


Method:
Heat oil in a pan, add the cumin seeds and let then sizzle. Then add the ginger garlic paste and cook for a minute. Now add the onion, green chilies, tomato puree and carrot. Mix well. Then add turmeric powder, red chili powder, sugar and salt. Stir and cover the pan. Let the veggies cook for 5 to 6 minutes. Then add the bell peppers, tomato, cardamom powder, all spice powder, ketchup and white vinegar. Cover and simmer for 3 more minutes. Garnish with spring onion and serve hot.
