Today we are making Afghani Banjan Borani. This special Irani and Afghani recipe is known for its amazing taste and is one of the finest side dishes that you will ever eat in Ramadan. In typical Mobbi's Kitchen style, and give you tons of tips and some substitutes that you can use to make it more healthy and personalized.

- 2 cups yogurt
- 1-2 eggplants sliced
- 1 large red onion sliced
- 1.5 tsp garlic paste
- 2 medium or 4 small tomatoes sliced
- 2 green chillies thinly diced
- 1 tsp salt or as per taste
- 1 tsp turmeric powder
- ½ tsp red chilli powder
