* All of these meals serve multiple people as a side dish :)

"Cheezy" Tahini Baked Cauliflower Bites:
- 2 heads of cauliflower cut into bite size chunks (large ones)
- 4-5 TBSP good runny tahini
- juice of 1 fresh lemon
- 2 tsp smoked paprika
- salt & pepper
- toss well & roast in the oven for 25-30 minutes 220c
- serve on fresh arugula with flaked almonds & garlic oil if you like

Balsamic Oven Dried Tomato Salad:
- 600g plum or small cherry tomatoes cut in half
- 2 TBSP balsamic vinegar
- salt
- toss well & spread (spaced out if possible) on a lined baking tray
- pre heat the oven on very high for 45 minutes
- place the tomatoes in the oven & turn it off, leave it over night & nect morning you should have perfectly squishy tangy delights :)
- if not as "dried" as you like you can just put them in a low heated oven for 45 mins.
- serve on sourdough toast with hummus, add to pasta salads etc..
- or eat it like I did with fresh corn, lots of creamy avocado, balsamic glaze & tahini :)
- apply to face

Cinnamon Roasted Pepper, Chickpeas & Bulgur Wheat Salad:
- 6 large bell peppers (any but green!!)
- 1 can of rinsed & drained chickpeas
- 2 tsp ground cinnamon
- salt & pepper
- 2-3 TBSP garlic infused olive oil (optional if you are oil free)
- 2 TBSP thicc balsamic glaze
- toss well & into a hot oven for 25 ish minutes (until the peppers are very soft & the chicpeas crsipy)
- serve as is or bump it up with bulgur wheat like I did..
- ps: the pepper mix is also amazing with pasta, to fill a baked potato, in a buddha bowl, on toast or...... if you eat rice then that works too

Traditional Persian Salad Shirazi:
- 6 big tomatoes (or maybe 2-3 if you have huge beef ones)
- 1 large cucumber
- 1 large red onion
- 2-3 cups fresh parsley
- small handful of fresh mint
- garlic infused olive oil (or if normal oil & fresh garlic)
- fresh lemon juice
- prepare as shown (& make sure you eat with with tahini like me!)
- This mix literally goes with everything :)
