Today, I am going to share how to make Miso soup with tofu and VEGAN Konbu Dashi in order to enjoy it all the people in the world regardless their dietary restriction as Konbu is plant-based.
I introduced Konbu Dashi which should be used for Japanese warm and comforting soup as VEGAN recipe, but If you add a vegetable into your Miso soup that contains a lot of UMAMI, savoriness such as a yellow onion, mushrooms or tomato for VEGAN, a protein like meat, fish or shellfish you don’t even use Dashi soup stock as the base!
The most enjoyable part is to be able to build your own Miso soup! The options are endless, so choose the source(miso) and a base(Dashi) first, then pick main ingredient and garnish! (the process is super easy, right ??) I hope you enjoy to dress up your soup to include many flavors and textures and make the best Miso soup which customized to your taste!!

Ingredients    1 us cup =250cc ★be careful it’s NOT 200cc!!
1 tbs =15cc
1 tsp =5cc
(Serve for 2)
For Konbu Dashi
Water 1 us qt/ 1L
Dried Konbu Kelp 20g/ 3-4 stalk

For VEGAN Miso Soup
Konbu Dashi stock 400cc/ 1 3/4 us cup
Miso Paste 2 tbs of more
*I use sweet yellow "Awase-miso" (combined one) in the video
Silken Tofu 1/3 pack
Green onion/ scallion ½-1 stalk

Instructions
How to make Konbu Dashi
1.Prepare 1 us qt/1L of cold water in a large pot.
2.Add Konbu kelp and soak for over several hours(Being 6h is ideal)
3. After konbu kelps have expanded, bring to a boil over Low/Med heat gradually.
4.Just before it’s boiling, remove the konbu kelps from the water.
5. let the Dashi cool down then keep in the refrigerator.

How to make Miso Soup
1. Prepare Konbu Dashi stock into a pan and bring to boil over MED/LOW heat.
2. Turn down to the Low heat and add tofu and let them warm a bit.
3. Add Miso paste onto a ladle/colander and dissolve completely.
4. Add Green onion/ scallion
5. When you see small bubbles around the rim of the pan, turn off the heat and serve.
